Ingredients

  • 120 grams rolled oats
  • 150 grams all-purpose flour
  • 50 grams granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 85 grams unsalted butter (cold, cubed)
  • 120 milliliters milk
  • 1 large egg
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, granulated sugar, baking powder, and salt. Stir to combine.

Step 3

Add the cold, cubed butter to the dry ingredients. Using your fingertips or a pastry cutter, work the butter into the mixture until it resembles coarse crumbs.

Step 4

In a separate small bowl, whisk together the milk, egg, and vanilla extract until well combined.

Step 5

Pour the wet mixture into the dry ingredients and stir just until a soft dough forms. Do not overmix.

Step 6

Turn the dough out onto a lightly floured surface and shape it into a disc about 2 cm (3/4 inch) thick.

Step 7

Using a knife or a bench scraper, cut the dough into 8 wedges, like slicing a pizza.

Step 8

Carefully transfer the scone wedges to the prepared baking sheet, spacing them about 2 cm (1 inch) apart.

Step 9

Bake in the preheated oven for 15-18 minutes, or until the scones are golden brown and cooked through.

Step 10

Remove the scones from the oven and allow them to cool slightly on a wire rack before serving.

Step 11

Serve warm or at room temperature, optionally with butter, jam, or clotted cream.
