  • 400 g pasta (penne or rigatoni preferred)
  • 500 g sausage (Italian-style, pork or beef)

  • 3 cloves garlic cloves
  • 400 g crushed tomatoes (canned)
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 0.5 tsp dried chili flakes (optional)
  • 50 g parmesan cheese (grated)
  • 10 leaves fresh basil leaves (plus extra for garnish)
  • 1 to taste salt
  • 1 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta cooking water.

Step 2

While the pasta cooks, heat olive oil in a large, deep frying pan or skillet over medium heat.

Remove the sausage meat from its casings and crumble it into the pan. Cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
