Ingredients

  • 250 g rotini pasta
  • 150 g salami
  • 200 g cherry tomatoes
  • 1 piece cucumber
  • 1 piece red bell pepper
  • 100 g black olives
  • 0.5 piece red onion
  • 50 g parmesan cheese, grated
  • 60 ml olive oil
  • 30 ml red wine vinegar
  • 1 tsp dijon mustard
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions, typically 8-10 minutes, until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Step 2

While the pasta is cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, and thinly slice the red onion. Set them aside in a large mixing bowl.

Cut the salami into small cubes or thin strips. Add the salami and black olives to the mixing bowl with the vegetables.
