While the syrup is heating, place the egg whites and cream of tartar in the bowl of a stand mixer fitted with the whisk attachment (or use a hand mixer and a large bowl).

Step 4

Start whipping the egg whites on medium speed until soft peaks form, about 2-3 minutes.

Once the sugar syrup reaches 240°F, remove it from the heat immediately. With the mixer running on low speed, slowly drizzle the hot syrup into the whipped egg whites in a thin, steady stream. Be careful not to pour too quickly to avoid cooking the egg whites.

Increase the mixer speed to high and continue beating the mixture until stiff, glossy peaks form and the bowl feels cool to the touch, about 7-10 minutes.

Add the vanilla extract and beat just until incorporated.
