Ingredients

  • 1 pound ground beef
  • 1 medium, diced yellow onion
  • 1 packet (or 2 tablespoons homemade) taco seasoning
  • 0.25 cup water
  • 10 small corn tortillas
  • 1 can (15 ounces) refried beans
  • 2 cups shredded cheddar cheese
  • 2 stalks, sliced thinly green onions
  • 1 cup chopped tomatoes
  • 0.5 cup sour cream
  • 2 tablespoons cooking oil
  • 0 optional toppings: avocado, hot sauce, cilantro

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium-high heat, add 2 tablespoons of cooking oil and sauté the diced onion until softened, about 2-3 minutes.

Step 3

Add the ground beef to the skillet and cook, breaking it up with a spatula, until it's browned and fully cooked, about 6-8 minutes.

Step 4

Stir in the taco seasoning and 1/4 cup of water. Let the mixture simmer for 2 minutes, then remove from heat.

Step 5

Lightly grease a 9x13-inch baking dish.

Step 6

Spread a thin layer of refried beans at the bottom of the prepared dish to prevent sticking.

Step 7

Tear or cut the corn tortillas into quarters. Layer half of the tortilla pieces to cover the base of the dish.

Step 8

Spread half of the taco-seasoned ground beef over the tortillas, followed by half of the refried beans and half of the shredded cheddar cheese.

Step 9

Repeat the layering process with the remaining tortillas, ground beef, beans, and cheese (in that order).

Step 10

Cover the dish with aluminum foil and bake for 15 minutes in the preheated oven.

Step 11

Remove the foil and bake for an additional 10 minutes, or until the cheese is fully melted and bubbling.

Step 12

Remove from the oven and let cool for 5 minutes.

Step 13

Top with chopped green onions, tomatoes, and dollops of sour cream. Add any optional toppings such as avocado, cilantro, or hot sauce for extra flavor.

Step 14

Serve warm and enjoy!
