Ingredients

  • 2 pieces (6-8 ounces each) fresh tuna steak
  • 2 tablespoons olive oil
  • 1 teaspoon lemon zest
  • 2 cloves garlic (minced)
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon fresh thyme (chopped)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper (freshly ground)
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • 0.25 cup white wine or vegetable broth

Directions

Step 1

Pat the fresh tuna steaks dry with a paper towel and set them aside on a plate.

Step 2

In a small bowl, mix 1 tablespoon of the olive oil, lemon zest, minced garlic, chopped parsley, chopped thyme, salt, and ground black pepper to create a herb marinade.

Step 3

Rub the marinade evenly over both sides of the tuna steaks. Let them rest at room temperature for 5 minutes to absorb the flavors.

Step 4

Heat a large non-stick skillet or grill pan over medium-high heat. Add the remaining 1 tablespoon of olive oil and the butter, allowing it to melt and become slightly bubbly.

Step 5

Place the tuna steaks in the skillet. Cook for 2-3 minutes per side for a perfectly seared tuna steak with a pink, tender center. Increase cook time by 1-2 minutes per side if you prefer your tuna well-done.

Step 6

Remove the tuna steaks from the skillet and transfer them to a plate. Cover with aluminum foil to keep warm.

Step 7

In the same skillet, lower the heat to medium and add the lemon juice and white wine or vegetable broth. Scrape up any flavorful bits from the bottom of the skillet with a wooden spoon.

Step 8

Simmer the sauce for 1-2 minutes until slightly reduced.

Step 9

Drizzle the sauce over the tuna steaks and serve immediately with your choice of sides, such as roasted vegetables or a fresh green salad.
