Ingredients

  • 300 grams Rotini pasta
  • 200 grams Cherry tomatoes
  • 1 medium Cucumber
  • 1 medium Red bell pepper
  • 0.5 medium Red onion
  • 100 grams Black olives
  • 100 grams Feta cheese
  • 2 tablespoons Fresh parsley
  • 4 tablespoons Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Cook the rotini pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Step 2

While the pasta is cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, finely chop the red bell pepper, and slice the red onion into thin strips.
