Ingredients

  • 5 pounds Prime rib roast
  • 2 tablespoons Kosher salt
  • 1 tablespoon Freshly ground black pepper
  • 6 cloves Garlic cloves, minced
  • 1 cup Unsalted butter, softened
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh rosemary, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 1 cup Beef broth
  • 1 tablespoon All-purpose flour

Directions

Step 1

Remove the prime rib roast from the refrigerator at least 1 hour before cooking to bring it to room temperature. Pat the roast dry with paper towels.

Step 2

Preheat your oven to 450°F (232°C).

Step 3

In a small bowl, mix together kosher salt, black pepper, and 2 cloves of minced garlic. Rub this mixture all over the prime rib roast, ensuring it is evenly coated.

Step 4

Place the roast bone-side down in a roasting pan or on a rack set inside the pan. Drizzle olive oil over the roast.

Step 5

Roast the prime rib in the preheated oven for 20 minutes to create a flavorful crust. Then, reduce the oven temperature to 325°F (163°C) and continue cooking for approximately 1.5 hours, or until the internal temperature reads 120°F (49°C) for medium-rare. Adjust cooking time based on desired doneness.

Step 6

While the roast is cooking, make the garlic butter sauce. In a small saucepan, melt the butter over medium heat. Add the remaining minced garlic, rosemary, and thyme. Cook for 2-3 minutes until fragrant.

Step 7

Once the roast is done, remove it from the oven and tent it loosely with aluminum foil. Let it rest for 20 minutes to allow the juices to redistribute.

Step 8

Using the same roasting pan, skim off any excess fat. Place the pan over medium heat and pour in the beef broth. Scrape up any browned bits from the bottom of the pan using a wooden spoon. Whisk in the flour and let the mixture simmer for 3-4 minutes until slightly thickened.

Step 9

Slice the rested prime rib roast into thick cuts and serve immediately with the garlic butter sauce and a drizzle of the pan gravy.
