Ingredients

  • 5 pounds Prime rib roast
  • 6 pieces Garlic cloves
  • 4 sprigs Fresh rosemary sprigs
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1.5 tablespoons Kosher salt
  • 2 teaspoons Black pepper
  • 3 sprigs Fresh thyme sprigs

Directions

Step 1

Remove the prime rib roast from the refrigerator at least 1 hour prior to cooking to bring it to room temperature. This ensures even cooking.

Step 2

Preheat your oven to 450°F (232°C).

Step 3

Peel and finely mince the garlic cloves. Strip the leaves from two of the rosemary sprigs and finely chop them.

Step 4

In a small bowl, combine the minced garlic, chopped rosemary, olive oil, butter, salt, and black pepper. Mix until it forms a paste-like consistency.

Step 5

Pat the prime rib roast dry with paper towels. Rub the entire roast generously with the garlic-rosemary butter mixture, ensuring it is evenly coated. If desired, slightly separate the fat cap from the meat and rub the mixture underneath for added flavor.

Step 6

Place the roast in a roasting pan with a wire rack. Position the remaining rosemary and thyme sprigs around the roast in the pan.

Step 7

Place the roast in the preheated oven and roast for 20 minutes at 450°F (232°C) to develop a flavorful crust.

Step 8

After 20 minutes, lower the oven temperature to 325°F (163°C) and continue cooking for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness: 120°F (49°C) for rare, 130°F (54°C) for medium-rare, or 140°F (60°C) for medium.

Step 9

Once the roast reaches the desired internal temperature, remove it from the oven and tent it loosely with aluminum foil. Let it rest for 20 minutes. During this time, the roast will continue to cook slightly, and the juices will redistribute.

Step 10

Slice the prime rib roast into thick slices and serve with your favorite side dishes. Enjoy!
