Ingredients

  • 2 pounds Bone-in prime rib roast
  • 1 tablespoon Kosher salt
  • 1 tablespoon Black pepper, freshly ground
  • 3 cloves Garlic cloves, minced
  • 1 tablespoon Fresh rosemary, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter, softened

Directions

Step 1

Remove the prime rib from the refrigerator at least 1 hour before cooking to bring it to room temperature. This ensures even cooking.

Step 2

Preheat your oven to 450°F (232°C).

Step 3

In a small bowl, mix the kosher salt, black pepper, minced garlic, chopped rosemary, chopped thyme, olive oil, and softened butter to form a paste.

Step 4

Pat the prime rib dry with paper towels, then rub the seasoning paste all over the roast, making sure to coat it evenly on all sides.

Step 5

Place the seasoned prime rib on a roast rack inside a roasting pan, bone-side down (or fat-side up if the bones have been removed).

Step 6

Roast the prime rib at 450°F (232°C) for 15 minutes to sear the outside and lock in the flavors.

Step 7

Reduce the oven temperature to 325°F (163°C) and continue roasting for approximately 60–75 minutes, or until the internal temperature reaches your desired doneness: 120°F (49°C) for rare, 130°F (54°C) for medium-rare, or 140°F (60°C) for medium. Use a meat thermometer to ensure accuracy.

Step 8

Remove the roast from the oven and loosely tent it with aluminum foil. Allow it to rest for 20 minutes; this helps the juices redistribute and keeps the meat tender.

Step 9

Slice the prime rib carefully against the grain and serve immediately. Pair with your favorite side dishes, such as garlic mashed potatoes or roasted vegetables.
