Ingredients

  • 4 pieces (8-10 oz each) Rib eye steaks
  • 4 tablespoons Dijon mustard
  • 1 cup (freshly grated) Parmesan cheese
  • 1 cup Panko breadcrumbs
  • 3 cloves (minced) Garlic
  • 2 tablespoons (chopped) Fresh parsley
  • 3 tablespoons Olive oil
  • 1 teaspoon Kosher salt
  • 1 teaspoon (freshly ground) Black pepper

Directions

Step 1

Remove the rib eye steaks from the refrigerator and let them come to room temperature for about 30 minutes before cooking.

Step 2

Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil.

Step 3

In a small bowl, mix the Dijon mustard, Parmesan cheese, Panko breadcrumbs, minced garlic, fresh parsley, olive oil, kosher salt, and black pepper until the mixture forms a thick paste.

Step 4

Pat the rib eye steaks dry with paper towels and season both sides lightly with salt and pepper.

Step 5

Heat a large ovenproof skillet over medium-high heat and add 1 tablespoon of olive oil. Once the oil is hot, sear the steaks for 2-3 minutes on each side, until a golden-brown crust forms.

Step 6

Remove the skillet from the heat and transfer the steaks onto the prepared baking sheet.

Step 7

Using a spoon or spatula, evenly spread the mustard-Parmesan mixture over the top side of each steak, pressing gently to ensure it adheres well.

Step 8

Place the baking sheet in the preheated oven and roast the steaks for 6-10 minutes, depending on your desired level of doneness (6 minutes for medium-rare, up to 10 minutes for medium). Use an instant-read thermometer to ensure proper internal temperature: 130°F (54°C) for medium-rare or 140°F (60°C) for medium.

Step 9

Once cooked to your liking, remove the steaks from the oven and let them rest for 5 minutes before serving.

Step 10

Serve the steaks hot with your favorite sides, such as roasted vegetables or mashed potatoes.
