Ingredients

  • 3 tablespoons butter
  • 2 medium leeks (white and light green parts only)
  • 4 medium potatoes (russet or Yukon Gold), peeled and diced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cups cabbage, shredded
  • 3 garlic cloves, minced
  • 6 cups vegetable or chicken stock
  • 1 bay leaf
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 green onions, thinly sliced (optional, for garnish)

Directions

Step 1

Melt the butter in a large soup pot over medium heat.

Step 2

Add the leeks and garlic. Sauté for 5-6 minutes, stirring occasionally, until the leeks are softened but not browned.

Stir in the diced potatoes, carrots, and celery. Cook for another 5 minutes, stirring occasionally.

Add the shredded cabbage and stir to combine.

Pour in the stock and add the bay leaf. Bring the mixture to a boil, then reduce the heat to low and let it simmer, covered, for 25-30 minutes until the vegetables are tender.
