Ingredients

  • 6 large prickly pears
  • 1 cup granulated sugar
  • 1 cup water
  • 2 tablespoons lemon juice

Directions

Step 1

Using gloves to avoid contact with the spines, carefully peel the prickly pears. Slice off both ends of each fruit and make a vertical cut through the skin. Gently peel the skin away from the flesh.

Step 2

Cut the prickly pear flesh into small chunks and place them in a medium saucepan.

Step 3

Add water to the saucepan and bring to a boil over medium heat. Once boiling, reduce the heat to low and simmer for 10 minutes, stirring occasionally to help break down the fruit.
