Ingredients

  • 2 whole prickly pears
  • 4 cups water
  • 2 tablespoons lime juice
  • 1 tablespoon honey or agave syrup
  • 5 leaves mint leaves
  • 1 cup ice cubes

Directions

Step 1

Using gloves to avoid the small spines, carefully peel the prickly pears by slicing off both ends and making a shallow cut lengthwise through the skin. Peel back the skin to reveal the bright flesh.

Step 2

Roughly chop the peeled prickly pear flesh into smaller pieces and place them in a blender.

Step 3

Add 4 cups of water to the blender along with the lime juice, honey or agave syrup, and mint leaves.

Step 4

Blend on high for 30-60 seconds until the mixture is smooth.

Step 5

Strain the blended mixture through a fine-mesh sieve or cheesecloth to remove the seeds and pulp. Discard the solids.

Step 6

Fill two glasses with ice cubes and pour the strained prickly pear water over the ice.
