Ingredients

  • 1.5 cups Warm water
  • 1 packet Active dry yeast
  • 2 tablespoons Granulated sugar
  • 4.5 cups All-purpose flour
  • 2 teaspoons Salt
  • 3 tablespoons Unsalted butter (melted)
  • 2 thirds cups Baking soda
  • 1 Egg yolk
  • 1 tablespoon Water (for egg wash)
  • 2 tablespoons Coarse salt (for topping)

Directions

Step 1

In a large mixing bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until frothy.

Step 2

Add the melted butter, salt, and 4 cups of flour to the yeast mixture. Mix until a dough begins to form.

Step 3

Turn the dough out onto a floured surface and knead for about 10 minutes, adding the remaining 1/2 cup of flour as needed until the dough is smooth and elastic.

Step 4

Place the dough in a greased bowl, cover with a kitchen towel, and let rise in a warm place for 1 hour or until doubled in size.

Step 5

Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.

Step 6

In a large pot, bring 10 cups of water to a boil and add the baking soda. Stir until dissolved, then reduce the heat to a gentle simmer.

Step 7

Divide the risen dough into 12 equal pieces and shape each piece into a ball. Flatten slightly to form a roll shape.

Step 8

Carefully place each dough ball into the simmering water, one or two at a time, for 30 seconds. Remove with a slotted spoon and place on the prepared baking sheets.

Step 9

In a small bowl, whisk the egg yolk with 1 tablespoon of water to create an egg wash. Brush the tops of the rolls with the egg wash and sprinkle with coarse salt.

Step 10

Using a sharp knife, score a shallow 'X' on the top of each roll.

Step 11

Bake in the preheated oven for 12-15 minutes, or until the rolls are a deep golden brown.

Step 12

Remove from the oven and let the rolls cool slightly before serving. Enjoy warm or at room temperature.
