  • 1.5 cups Coconut milk (unsweetened)
  • 1.5 cups Cold water
  • 1 cup Ice cubes
  • 6 small leaves Fresh mint leaves
  • 3 slices Optional garnish: sliced strawberries

Directions

Step 1

Wash the strawberries and raspberries thoroughly under cold water.

Step 2

Remove the green stems from the strawberries and cut them into halves.

Step 3

In a small saucepan, combine the strawberries, raspberries, sugar, and lemon juice. Cook over medium heat for 4-5 minutes, stirring occasionally, until the fruit softens and breaks down into a syrup-like consistency.

Remove the saucepan from heat and strain the mixture through a fine-mesh sieve into a bowl or pitcher, pressing gently with a spoon to extract as much liquid as possible. Discard the fruit pulp.
