Ingredients

  • 3 cups Fresh strawberries, hulled and chopped
  • 2 tbsp Cornstarch
  • 1 tbsp Lemon juice
  • 1 tsp Vanilla extract
  • 0.33 cup Brown sugar
  • 0.5 cup Quick oats

Directions

Step 1

Preheat the oven to 350°F (175°C) and line an 8x8-inch square baking pan with parchment paper, leaving an overhang for easy removal.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 3

Press two-thirds of the crumb mixture firmly into the bottom of the prepared baking pan to form an even crust. Set the remaining third aside for the streusel topping.

Step 4

In a medium saucepan over medium heat, combine the chopped strawberries, cornstarch, lemon juice, and vanilla extract. Cook, stirring frequently, until the mixture thickens and the strawberries soften, about 5–7 minutes. Remove from heat and let cool slightly.
