  • 2 tablespoons Olive oil

  • 3 cloves Garlic (minced)
  • 1 medium Carrot (diced)
  • 1 stalk Celery (diced)
  • 1 leaf Bay leaf
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Smoked paprika
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

Sort through the dried large white lima beans to remove any debris or damaged beans. Rinse thoroughly under cold water.

Step 2

Optional but recommended: Soak the beans in water for 6-8 hours or overnight to reduce cooking time and improve digestibility. Drain and rinse before cooking.

Set your pressure cooker to sauté mode and add the olive oil.
