Ingredients

  • 2 pounds Yukon Gold potatoes
  • 12 ounces Smoked sausage
  • 4 slices Bacon
  • 1 medium Yellow onion
  • 0.25 cup Apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Sugar
  • 0.5 cup Chicken broth
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel and cut the Yukon Gold potatoes into 1/2-inch thick slices. Set aside.

Cut the smoked sausage into 1/4-inch slices and set aside.

Step 3

Turn the pressure cooker to sauté mode. Cook the bacon slices until crisp, then remove and set aside on a paper towel-lined plate. Once cooled, crumble the bacon.

In the rendered bacon fat in the pressure cooker, add the sliced sausage and cook for 3-4 minutes until browned. Remove and set aside.
