  • 3 cloves garlic cloves, minced
  • 1 medium carrot, diced
  • 0.5 cup frozen peas
  • 1 teaspoon paprika
  • 0.5 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Set your pressure cooker to the sauté function and heat the olive oil.

Step 2

Season the chicken thighs with salt and pepper, then sear them in the pressure cooker for 2-3 minutes per side until golden brown. Remove and set aside.

Step 3

Add the diced onion, garlic, and carrot to the pressure cooker. Sauté for 2-3 minutes until the vegetables are softened.
