  • 2 medium Potatoes
  • 1 medium Yellow onion
  • 1 medium Red bell pepper
  • 1 teaspoon Paprika
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and thinly slice the potatoes into rounds about 1/8-inch thick. Set aside.

Step 2

Peel and finely chop the onion. Dice the red bell pepper into small pieces.

Step 3

Heat 2 tablespoons of olive oil in a large, non-stick skillet over medium heat. Add the sliced potatoes and season with half of the salt. Cook for about 10 minutes, flipping occasionally, until the potatoes are tender and lightly golden.

Add the chopped onion and diced red bell pepper to the skillet with the potatoes. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are softened.
