Ingredients

  • 2 tablespoons olive oil
  • 1 large onion
  • 3 large garlic cloves
  • 2 medium carrots
  • 3 medium potatoes
  • 8 ounces smoked sausage
  • 12 ounces sauerkraut
  • 1 teaspoon paprika
  • 0.5 teaspoons ground caraway seeds
  • 1 leaf bay leaf
  • 6 cups chicken broth
  • 0.5 cups heavy cream
  • 1 to taste salt
  • 1 to taste black pepper
  • 2 tablespoons fresh dill (optional)
  • 1 dollop per serving sour cream (optional, for garnish)

Directions

Step 1

Peel and finely dice the onion, mince the garlic, and peel and chop the carrots and potatoes into small, bite-sized pieces.

Step 2

Slice the smoked sausage into thin rounds or cubes as preferred.

Step 3

Heat the olive oil in a large soup pot over medium heat. Once hot, add the onion and cook for 3-5 minutes until softened and translucent.

Step 4

Add the minced garlic and cook for another 1 minute, stirring frequently to prevent burning.

Step 5

Stir in the carrots and sauté for 2-3 minutes. Then add the potatoes and smoked sausage, stirring to combine.

Step 6

Add the sauerkraut to the pot along with the paprika, ground caraway seeds, and bay leaf. Stir well to distribute the spices.

Step 7

Pour in the chicken broth and stir. Increase the heat to bring the soup to a boil, then reduce to a simmer.

Step 8

Cover the pot with a lid and let the soup simmer for about 30 minutes, or until the vegetables are tender.

Step 9

Remove the bay leaf from the pot and discard it. Stir in the heavy cream, season with salt and black pepper to taste, and heat through for another 2-3 minutes (do not boil).

Step 10

Ladle the soup into bowls and garnish with fresh dill and a dollop of sour cream, if desired. Serve hot and enjoy!
