Ingredients

  • 4 pieces (about 6 oz each) salmon fillet
  • 1 whole preserved lemon
  • 3 tablespoons capers
  • 4 tablespoons olive oil
  • 6 cups mixed salad greens
  • 1 cup, halved cherry tomatoes
  • 1 small, sliced cucumber
  • 0.5 small, thinly sliced red onion
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

Place the salmon fillets on the prepared baking sheet. Drizzle 2 tablespoons of olive oil over the fillets and season with a pinch of salt and black pepper. Roast in the oven for 12-15 minutes, or until the salmon flakes easily with a fork. Remove from the oven and let cool slightly.
