  • 1 large (diced) Yellow onion
  • 4 cloves (minced) Garlic cloves
  • 2 (diced) Celery stalks
  • 1 large (diced) Carrot
  • 2 teaspoons Cumin powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 6 cups Vegetable broth
  • 2 Bay leaves
  • 2 teaspoons (adjust to taste) Salt
  • 0.5 teaspoon (adjust to taste) Black pepper
  • 2 tablespoons (chopped, for garnish) Fresh cilantro
  • 1 large (cut into wedges) Lime

Directions

Step 1

Rinse the dried black beans thoroughly under running water and remove any debris.

Step 2

Place the beans in a large bowl and cover them with water. Soak for at least 8 hours or overnight. Drain and rinse the beans before cooking.

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the diced onion to the pot and sauté for 3-4 minutes until softened and translucent.
