Ingredients

  • 300 grams raw prawns, peeled and deveined
  • 250 grams egg noodles
  • 100 ml teriyaki sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 3 spring onions, sliced
  • 150 grams broccoli florets
  • 1 tablespoon sesame seeds, toasted
  • 2 lime wedges (for serving)

Directions

Step 1

Prepare the egg noodles as per the package instructions. Drain, rinse with cold water, and toss with half of the sesame oil to prevent sticking. Set aside.

Step 2

Heat the vegetable oil in a large wok or skillet over medium-high heat.

Step 3

Add the garlic and ginger to the wok, cooking for about 30 seconds until fragrant.

Step 4

Add the prawns to the wok and stir-fry for 2-3 minutes, or until they turn pink and opaque. Remove the prawns and set aside.

Step 5

In the same wok, add the red bell pepper, carrot, broccoli, and the white part of the spring onions. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Step 6

Push the vegetables to one side of the wok and pour in the teriyaki sauce and soy sauce. Allow the sauce to heat for 30 seconds before tossing it with the vegetables.

Step 7

Return the cooked prawns to the wok along with the noodles. Toss everything together until evenly coated and warmed through.

Step 8

Drizzle the remaining sesame oil over the stir fry and toss again.

Step 9

To serve, divide the stir fry among bowls, garnish with the green part of the spring onions and toasted sesame seeds, and squeeze fresh lime juice over the top.
