Prawn Tempura

Perfectly seasoned prawns are coated in a delicate, ice-cold batter made with all-purpose flour and baking soda, then fried to perfection for an irresistibly crunchy texture. The key to this recipe's success lies in its attention to detail: keeping the batter chilled to maintain that signature lightness and making small cuts on the prawns to ensure they fry evenly without curling. Ready in just 30 minutes, this quick and easy tempura dish is ideal for a starter or a light meal. Serve it hot with your favorite dipping sauce, such as soy sauce or a classic tempura dipping sauce, for a restaurant-quality experience at home.

Ingredients

  • 12 pieces Large raw prawns, peeled and deveined
  • 240 ml Cold water
  • 120 grams All-purpose flour
  • 0.5 teaspoon Baking soda
  • 3 cubes Ice cubes
  • 1000 ml Vegetable oil (for frying)
  • 0.5 teaspoon Salt

Directions

Step 1

Begin by preparing the prawns. Make horizontal slits on the underside of the prawns to prevent them from curling while frying.

Step 2

In a large mixing bowl, add the cold water and ice cubes. This is essential to keep the batter cold, ensuring a crispy texture.

Step 3

In a separate bowl, mix together the all-purpose flour and baking soda.

Step 4

Gradually whisk the flour mixture into the ice-cold water until just combined. It's okay if the batter is slightly lumpy.

Step 5

Heat vegetable oil in a deep frying pan or a wok over medium-high heat to about 175°C (350°F).

Step 6

Pat the prawns dry with a paper towel to remove any moisture and lightly salt them.

Step 7

Dip each prawn into the batter, ensuring they are well-coated.

Step 8

Carefully place the coated prawns into the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes until golden brown.

Step 9

Remove the prawns with a slotted spoon and drain on paper towels to remove excess oil.

Step 10

Serve immediately with dipping sauce of choice, such as soy sauce or tempura sauce.
