Ingredients

  • 250 grams prawns (shrimp), peeled and deveined
  • 200 grams snow peas, trimmed
  • 200 grams egg noodles (dried or fresh)
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil
  • 2 scallions, sliced
  • 1 teaspoon chili flakes (optional)
  • 100 milliliters water

Directions

Step 1

Cook the egg noodles according to the package instructions, drain, and set aside.

Step 2

In a small bowl, mix the soy sauce, oyster sauce, sesame oil, cornstarch, and water until well combined. This will be the stir fry sauce.

Step 3

Heat one tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

Step 4

Add the prawns and cook for 2-3 minutes, stirring occasionally, until they turn pink and are cooked through. Remove them from the wok and set aside.

Step 5

Add the remaining tablespoon of vegetable oil to the wok. Stir in the minced garlic, ginger, and chili flakes (if using). Stir fry for 30 seconds until fragrant.

Step 6

Add the snow peas to the wok and stir fry for 2 minutes until they are bright green and slightly tender but still crisp.

Step 7

Return the cooked prawns to the wok and add the drained noodles. Pour the prepared sauce over the mixture.

Step 8

Toss everything together until the noodles, prawns, and snow peas are evenly coated in the sauce.

Step 9

Cook for an additional 1-2 minutes, stirring frequently, until the sauce thickens slightly and everything is heated through.

Step 10

Top with sliced scallions for garnish and serve hot.
