Ingredients

  • 500 grams Prawns
  • 5 pieces Shallots
  • 3 pieces Garlic cloves
  • 5 pieces Red chilies
  • 3 pieces Bird's eye chilies
  • 1 medium Tomato
  • 2 tablespoons Tamarind paste
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 4 tablespoons Vegetable oil
  • 100 milliliters Water

Directions

Step 1

Clean and devein the prawns, then rinse them under cold water and pat dry using paper towels. Set aside.

Step 2

Peel the shallots and garlic cloves. Roughly chop the shallots, garlic, red chilies, and bird's eye chilies. Quarter the tomato.

Step 3

In a blender or food processor, combine the chopped shallots, garlic, chilies, and tomato. Blend into a coarse paste.

Step 4

Heat the vegetable oil in a large pan or wok over medium heat.

Step 5

Add the blended paste to the pan and sauté for about 5-7 minutes until fragrant and the oil starts to separate from the paste.

Add the tamarind paste, sugar, and salt to the sambal paste, stirring well to combine.

Add the prawns to the pan, stirring to coat them entirely with the sambal paste. Cook for about 5 minutes.

Step 8

Pour in the water and bring the mixture to a simmer. Cook for an additional 5 minutes or until the prawns are cooked through and the sambal sauce thickens to your liking.
