  • 300 grams linguine pasta
  • 300 grams raw prawns (peeled and deveined)
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 1 teaspoon red chili flakes
  • 1 lemon (zested and juiced)
  • 100 milliliters white wine (dry)
  • 200 grams cherry tomatoes (halved)
  • 2 tablespoons parsley (chopped)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper (freshly ground)
  • 50 grams Parmesan cheese (grated, optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

Step 2

While the pasta is cooking, heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Step 3

Add the minced garlic and red chili flakes to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Add the cherry tomatoes to the skillet and cook for 3-4 minutes, stirring occasionally, until they soften slightly.

Season the prawns with a pinch of salt and pepper, then add them to the skillet. Cook for 2-3 minutes on each side until they turn pink and are fully cooked. Remove the prawns from the skillet and set aside.

In the same skillet, pour in the white wine and lemon juice to deglaze the pan, scraping any flavorful bits from the bottom. Simmer for 2-3 minutes until the wine has reduced slightly.

Add the cooked pasta, reserved pasta water, lemon zest, and remaining tablespoon of butter to the skillet. Toss everything together until the pasta is well coated in the sauce.

Return the cooked prawns to the skillet and toss gently to combine. Adjust the seasoning with additional salt and pepper, if needed.
