Preheat your oven to 200°C (400°F). Grease a 12-hole mini muffin tin.
On a lightly floured surface, cut the shortcrust pastry sheets into 12 equal circles using a cookie cutter or glass. Gently press the pastry circles into the prepared muffin tin to form pie shells.
In a skillet over medium heat, melt the butter. Add the minced garlic and chopped shallot, cooking until fragrant and softened, about 2 minutes.
Stir in the flour and cook for 1 minute, stirring constantly to make a roux.
Gradually whisk in the milk, making sure there are no lumps. Add the chicken stock, stirring continuously, and cook for 3-4 minutes or until the sauce thickens.
Add the prawns to the skillet and cook for 2-3 minutes until they just turn pink. Stir in the paprika, parsley, salt, and pepper. Remove from heat and let the filling cool slightly.
Spoon the prawn mixture evenly into the pastry shells.
Cut out smaller pastry circles to use as lids for the pies. Place a lid on each pie and press the edges to seal. Brush the tops with the beaten egg for a golden finish.

Bake in the preheated oven for 15-18 minutes, or until the pastry is golden and crisp.
