  • 1 teaspoon Ground turmeric
  • 250 grams Orzo pasta
  • 750 milliliters Chicken stock
  • 400 grams Canned diced tomatoes
  • 100 grams Frozen green peas
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (chopped)
  • 4 Lemon wedges (to serve)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large, deep skillet or paella pan over medium-high heat.

Step 2

Season the chicken thighs with a pinch of salt and pepper, then sear them in the pan until browned on all sides, about 5 minutes. Remove from the pan and set aside.

Step 3

Add the remaining tablespoon of olive oil to the same pan. Sauté the diced onion and red bell pepper until softened, about 4 minutes.
