Ingredients

  • 500 g Raw prawns (peeled and deveined)
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 2 stalks Spring onions (finely chopped)
  • 1 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 4 tbsp Cornstarch
  • 1 large Egg
  • 150 g Panko breadcrumbs
  • 500 ml Vegetable oil (for frying)
  • 0.5 tsp Salt
  • 0.25 tsp White pepper

Directions

Step 1

Place the peeled and deveined prawns into a food processor and pulse until finely minced. If you don't have a food processor, you can finely chop them with a knife.

Step 2

Transfer the minced prawns into a mixing bowl. Add finely minced garlic, ginger, chopped spring onions, soy sauce, sesame oil, cornstarch, salt, and white pepper. Mix well until the ingredients are fully incorporated and the mixture sticks together.

Step 3

Using clean hands, take small portions of the prawn mixture and roll them into bite-sized balls. Repeat until all the mixture is used. You should end up with about 16–18 prawn balls.

Step 4

Beat the egg in a shallow bowl. Place the panko breadcrumbs in another shallow bowl.

Step 5

Dip each prawn ball into the beaten egg, then coat it thoroughly with the panko breadcrumbs. Place the coated prawn balls on a plate and set aside.

Step 6

Heat the vegetable oil in a large, deep pan or wok over medium-high heat. The oil should reach about 180°C (350°F) – test it by dropping a breadcrumb into the oil; it should sizzle and turn golden brown within a few seconds.

Step 7

Carefully add a few prawn balls at a time into the hot oil, ensuring not to overcrowd the pan. Fry for 2–3 minutes on each side or until golden brown and crispy.

Step 8

Use a slotted spoon to remove the prawn balls from the oil and place them on a plate lined with paper towels to drain excess oil.

Step 9

Repeat the frying process with the remaining prawn balls.

Step 10

Serve the crispy prawn balls warm with your favorite dipping sauce, such as sweet chili, soy ginger, or garlic mayonnaise.
