Ingredients

  • 200 grams mashed potatoes (cooked, unsalted)
  • 100 grams rolled oats (or finely milled oats)
  • 50 grams all-purpose flour
  • 30 grams unsalted butter
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper (optional)
  • 2 tablespoons milk (as needed)

Directions

Step 1

Preheat your oven to 190°C (375°F) and line a baking tray with parchment paper.

Step 2

In a medium mixing bowl, combine the mashed potatoes and rolled oats. Mix well to combine.

Step 3

Add the flour, baking powder, salt, and black pepper (if using) to the potato and oat mixture. Stir until evenly distributed.

Step 4

Cut the butter into small pieces and rub it into the mixture using your fingers or a pastry cutter until it resembles coarse crumbs.

Step 5

Gradually add the milk, one tablespoon at a time, mixing until the dough just comes together. The dough should be firm but not sticky. Be cautious not to overwork it.

Step 6

Lightly flour a clean surface and roll out the dough to a thickness of about 3-4 mm (1/8 inch).

Step 7

Cut the dough into your desired shapes using cookie cutters, a knife, or a round glass. Transfer the shapes to the prepared baking tray.

Step 8

Prick the surface of each cracker a few times with a fork to prevent puffing during baking.

Step 9

Bake in the preheated oven for 18-20 minutes, or until the crackers are golden brown and crisp.

Step 10

Remove from the oven and allow the crackers to cool in the tray for 5 minutes, then transfer them to a wire rack to cool completely.

Step 11

Serve the crackers as a snack or with your favorite spreads, cheeses, or soups. Store in an airtight container for up to a week.
