Ingredients

  • 2 cups Granulated sugar
  • 0.5 cups Light brown sugar, packed
  • 0.5 cups Unsalted butter
  • 0.5 cups Heavy cream
  • 0.5 cups Whole milk
  • 1 teaspoons Vanilla extract
  • 0.25 teaspoons Salt
  • 2 cups Pecan halves

Directions

Step 1

Prepare a baking sheet by lining it with parchment paper or a silicone baking mat. Set aside.

Step 2

In a large, heavy-bottomed saucepan over medium heat, combine granulated sugar, light brown sugar, unsalted butter, heavy cream, and whole milk.

Step 3

Stir the mixture continuously until the sugars dissolve and the butter melts. Attach a candy thermometer to the side of the pan.

Step 4

Continue to cook the mixture without stirring until it reaches 238°F (soft-ball stage) on the candy thermometer.

Step 5

Once the mixture reaches 238°F, immediately remove it from the heat. Stir in the vanilla extract, salt, and pecan halves.

Step 6

Working quickly, spoon heaping tablespoons of the mixture onto the prepared baking sheet, spacing the pralines apart so they don’t stick together.

Step 7

Allow the pralines to cool and set at room temperature for 20-30 minutes, or until firm.

Step 8

Once fully set, carefully peel the pralines off the parchment paper or silicone mat. Store them in an airtight container at room temperature for up to 1 week.
