Ingredients

  • 1.5 cups Granulated sugar
  • 0.5 cups Light brown sugar
  • 4 tablespoons Unsalted butter
  • 0.5 cups Heavy cream
  • 0.25 cups Whole milk
  • 1 teaspoons Vanilla extract
  • 1.5 cups Pecan halves
  • 0.25 teaspoons Salt

Directions

Step 1

Line a baking sheet with parchment paper or a silicone mat and set aside.

Step 2

In a medium-sized heavy-bottomed saucepan, combine the granulated sugar, light brown sugar, unsalted butter, heavy cream, and whole milk.

Step 3

Place the saucepan over medium heat and stir continuously until the sugars dissolve and the mixture begins to boil.

Step 4

Clamp a candy thermometer to the side of the saucepan, ensuring it does not touch the bottom. Continue boiling the mixture without stirring until it reaches 236°F (soft-ball stage). This should take about 10-12 minutes.

Step 5

Once the mixture reaches 236°F, immediately remove the saucepan from the heat and stir in the vanilla extract, pecan halves, and salt.

Step 6

Let the mixture cool slightly, about 1 minute, until it thickens slightly but is still pourable.

Step 7

Working quickly, spoon heaping tablespoons of the praline mixture onto the prepared baking sheet to form individual cookies.

Step 8

Allow the pralines to cool and harden at room temperature for 20-30 minutes.

Step 9

Once set, gently lift the pralines from the baking sheet and store them in an airtight container at room temperature for up to one week.
