  • 200 grams granulated sugar
  • 60 grams unsalted butter
  • 120 milliliters heavy cream
  • 1 teaspoon vanilla extract
  • 100 grams pecans
  • 0.5 teaspoon sea salt

Directions

Step 1

Toast the pecans: In a dry skillet over medium heat, toast the pecans for 3-4 minutes until fragrant. Remove from heat, let them cool slightly, and chop coarsely. Set aside.

Step 2

In a medium saucepan, heat the granulated sugar over medium heat, stirring continuously with a wooden spoon or heatproof spatula. The sugar will clump and then melt into a golden-brown liquid. Be careful not to burn it.

Step 3

Once the sugar has completely melted, add the butter. The mixture will bubble vigorously; stir until the butter is fully incorporated.
