Ingredients

  • 2 cups granulated sugar
  • 1 cup packed light brown sugar
  • 1 cup unsalted butter
  • 1 cup heavy cream
  • 7 ounces marshmallow creme
  • 2 teaspoons vanilla extract
  • 2 cups pecans, chopped

Directions

Step 1

Line a 9x13-inch baking dish with aluminum foil and lightly grease it with butter or nonstick spray. Set aside.

In a large, heavy-bottomed saucepan, combine the granulated sugar, light brown sugar, butter, and heavy cream.

Place the saucepan over medium heat and stir the mixture constantly until the sugar dissolves and the butter melts.

Once the mixture begins to boil, attach a candy thermometer to the side of the pan. Continue cooking, without stirring, until the mixture reaches 238°F (soft ball stage). This usually takes about 10-15 minutes.
