Ingredients

  • 4 medium-sized Russet potatoes
  • 1 medium-sized White onion
  • 3 tablespoons All-purpose flour
  • 2 large Eggs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder (optional)
  • 0.5 cup Vegetable oil
  • 0.5 cup Sour cream (for serving)
  • 2 tablespoons Chopped fresh chives (for garnish)

Directions

Step 1

Peel the potatoes and onion. Grate both on the large holes of a box grater or use a food processor with a grating attachment.

Step 2

Place the grated potatoes and onion into a clean kitchen towel or cheesecloth. Squeeze tightly over the sink to remove as much liquid as possible.

Step 3

Transfer the grated potatoes and onion to a large mixing bowl. Add the flour, eggs, salt, black pepper, and optional garlic powder. Mix until thoroughly combined.

Step 4

Heat the vegetable oil in a large skillet over medium heat. The oil should cover the bottom of the pan by about 1/4 inch.

Step 5

Scoop about 2 tablespoons of the potato mixture into your hands and form into a small, flat patty. Carefully place the patty into the hot oil.

Step 6

Repeat with additional potato mixture, being careful not to overcrowd the skillet. Fry for about 3-4 minutes per side, or until golden brown and crispy.

Step 7

Remove the pancakes from the skillet and place them on a plate lined with paper towels to drain excess oil.

Step 8

Repeat the process with the remaining potato mixture, adding more oil to the skillet as needed.

Step 9

Serve the potato pancakes warm, topped with a dollop of sour cream and a sprinkle of chopped chives. Enjoy!
