Ingredients

  • 450 grams All-purpose flour
  • 50 grams Sugar
  • 1 teaspoon Salt
  • 1 packet Active dry yeast
  • 240 milliliters Whole milk
  • 60 grams Unsalted butter (melted)
  • 1 large Egg
  • 200 grams Ground walnuts
  • 100 grams Powdered sugar
  • 2 teaspoons Cinnamon
  • 1 large Egg white
  • 1 teaspoon Vanilla extract
  • 60 milliliters Milk (for filling)

Directions

Step 1

In a small saucepan, heat 240ml whole milk until warm but not boiling (about 38°C/100°F). Sprinkle the active dry yeast on top and let it sit for 5-10 minutes until foamy.

Step 2

In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center and pour in the yeast mixture, melted butter, and beaten egg. Mix until the dough starts to come together.

Step 3

Turn the dough onto a lightly floured surface and knead for 8–10 minutes, or until smooth and elastic. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1–1.5 hours, or until it has doubled in size.

While the dough is rising, prepare the filling. In a medium mixing bowl, combine the ground walnuts, powdered sugar, and cinnamon. In a small bowl, whisk together the egg white, vanilla extract, and 60ml milk. Gradually add the wet ingredients to the dry ingredients, mixing until you have a spreadable paste.

Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it into a large rectangle, about 1/4 inch thick.

Spread the walnut filling evenly over the dough, leaving a small border around the edges. Roll the dough tightly into a log, starting from one of the longer edges. Pinch the seam and ends to seal.

Step 7

Grease a standard loaf pan. Carefully coil the rolled dough into an 'S' shape and place it into the greased loaf pan. Cover with a towel and let it rise again for 30–40 minutes.

Preheat your oven to 175°C (350°F). Once risen, brush the top of the dough with milk or a beaten egg yolk to give it a golden crust.

Step 9

Bake for 45–50 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom. If it begins to brown too quickly, cover it loosely with aluminum foil.

Step 10

Remove the bread from the oven and let it cool in the pan for 10-15 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.
