  • 2 cups Baby spinach
  • 1 cup Optional cooked grains (e.g., quinoa, farro, or rice)
  • 2 pieces Glass jars with lids

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the shallot, diced carrot, and celery. Sauté for 3-4 minutes until softened but not browned.
