Heat the olive oil in a large pot over medium heat. Add the shallot, diced carrot, and celery. Sauté for 3-4 minutes until softened but not browned.
Add the minced garlic and sauté for 1 more minute until fragrant.
Pour in the chicken stock and bring to a gentle simmer.
Add fresh thyme, parsley sprigs, bay leaf, and the zest of half a lemon to the pot. Stir and season the broth with salt and black pepper.
Place the chicken breasts into the simmering broth. Ensure they are fully submerged. Poach gently for 15-18 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C). Do not boil as this will toughen the chicken.
While the chicken poaches, layer the bottom of each jar with a handful of baby spinach and (if using) a few spoonfuls of cooked grains.
Once the chicken is done, transfer it to a cutting board. Slice thinly or shred using forks.
Strain the broth through a fine mesh sieve to remove the herbs and aromatics, leaving a clear and flavorful broth.
Distribute the chicken evenly between the jars on top of the spinach and grains. Pour the hot broth into each jar, covering the contents completely.
Seal each jar with its lid. Let the jars sit for 5 minutes to allow the heat to wilt the spinach and infuse the ingredients.
Serve warm or cool completely and refrigerate for up to 2 days for a portable meal. To enjoy, simply reheat in the jar or eat chilled.
