Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic cloves, minced
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3 tablespoons Dijon mustard
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons parsley, chopped (optional for garnish)

Directions

Step 1

Season both sides of the chicken breasts with the salt and pepper. Dust them lightly with the flour, ensuring an even coating on each piece.

Step 2

In a large skillet, heat the butter and olive oil over medium heat until the butter is melted and begins to foam.

Step 3

Add the chicken breasts to the skillet and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add the minced garlic and sauté for 1-2 minutes, or until fragrant, being careful not to let it burn.

Step 5

Deglaze the skillet by adding the white wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes until slightly reduced.

Step 6

Stir in the chicken broth, heavy cream, and Dijon mustard. Mix well to create a smooth, creamy sauce.

Step 7

Add the thyme leaves to the sauce and let it simmer for 5-7 minutes, or until the sauce has thickened slightly.

Step 8

Return the chicken breasts to the skillet, spooning the sauce over them. Simmer for an additional 5 minutes to allow the chicken to absorb the flavors.

Step 9

Taste the sauce and adjust seasoning with additional salt or pepper if needed.

Step 10

Serve the Poulet Dijon hot, garnished with chopped parsley if desired, alongside rice, mashed potatoes, or a crusty baguette.
