  • 4 pieces Boneless, skinless chicken breasts

  • 60 grams All-purpose flour
  • 2 large Eggs
  • 120 grams Breadcrumbs (preferably panko)
  • 30 grams Unsalted butter
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper or grease lightly with olive oil.

Using a sharp knife, carefully cut a pocket into the side of each chicken breast without slicing all the way through.
