Ingredients

  • 200 g Stilton cheese
  • 100 g Unsalted butter
  • 50 g Walnuts
  • 2 tbsp Port wine
  • 1 tbsp Fresh parsley (finely chopped)
  • 0.25 tsp Fresh ground black pepper
  • 30 g Extra melted butter (for sealing)
  • 0 optional Crackers or crusty bread (for serving)

Directions

Step 1

1. Remove the Stilton cheese from the fridge and allow it to come to room temperature for easy mixing.

Step 2

2. Finely chop the walnuts and set aside.

Step 3

3. In a small saucepan, melt the butter over low heat until just softened but not browned. Remove from heat and let cool briefly.

Step 4

4. In a mixing bowl, crumble the Stilton cheese and mash it with a fork until smooth.

Step 5

5. Gradually fold in the softened butter, blending thoroughly to create a creamy mixture.

Step 6

6. Add the port wine and mix well, ensuring it is evenly distributed throughout the cheese mixture.

Step 7

7. Stir in the chopped walnuts, fresh parsley, and ground black pepper. Taste and adjust seasoning if necessary.

Step 8

8. Transfer the mixture into small ramekins or jars, pressing it down gently to remove air pockets and smooth the surface.

Step 9

9. Melt the additional butter for sealing in a small saucepan over low heat and pour a thin layer over the top of each ramekin to seal the cheese. Allow to cool completely.

Step 10

10. Cover the ramekins with lids or plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld together. The mixture will keep in the fridge for up to a week.

Step 11

11. Serve the potted Stilton chilled or at room temperature with crackers or crusty bread slices for dipping.
