Ingredients

  • 225 grams Stilton cheese
  • 100 grams Unsalted butter (softened)
  • 2 tablespoons Port wine
  • 0.5 teaspoons Freshly ground black pepper
  • 0.25 teaspoons Nutmeg (freshly grated)
  • 50 grams Clarified butter (melted, for sealing)
  • 1 sprig Fresh thyme leaves (optional, for garnish)

Directions

Step 1

Crumble the Stilton cheese into a mixing bowl, removing any rind if desired.

Step 2

Using a fork or a food processor, blend the Stilton and softened unsalted butter until smooth and creamy.

Step 3

Stir in the port wine, black pepper, and freshly grated nutmeg. Mix well to combine and adjust seasoning if necessary.

Step 4

Transfer the cheese mixture into small ramekins or jars, pressing it down to eliminate any air pockets.

Step 5

Pour a thin layer of melted clarified butter over the surface of the cheese to seal it. Optionally, garnish with a small sprig of thyme before the butter sets.

Step 6

Refrigerate for at least 2 hours to firm up before serving.

Step 7

Serve chilled or at room temperature with crackers, crusty bread, or fresh fruit. Keep any leftovers covered in the refrigerator for up to 1 week.
