Directions

Step 1

Melt the butter gently in a small saucepan over low heat. Once completely melted, skim off the white solids that float to the top with a spoon to clarify it. Pour the golden liquid butter into a bowl, leaving the milky residue behind in the pan. Set aside.

Roughly chop the cooked prawns into small, bite-sized pieces and place them in a mixing bowl.

Add the ground mace, cayenne pepper, freshly grated nutmeg, lemon juice, salt, and black pepper to the prawns. Mix thoroughly to evenly distribute the spices.
