Ingredients

  • 4 slices Thick-cut bologna
  • 2 tablespoons Butter
  • 4 slices White or sourdough bread
  • 2 slices American cheese
  • 2 teaspoons Yellow mustard
  • 2 tablespoons Mayonnaise
  • 1 serving Optional toppings (lettuce, tomato, pickles)

Directions

Step 1

Preheat a skillet or frying pan over medium heat.

Step 2

Place the slices of bologna in the skillet. Use a knife to make 2-3 small slits around the edges of each slice to prevent them from curling while cooking.

Step 3

Fry the bologna for 2-3 minutes per side, or until the edges are crispy and golden brown. Remove the bologna and set aside.

Step 4

Spread 1 tablespoon of butter evenly on one side of each slice of bread. The buttered sides will be the outer sides of the sandwich when grilling.

Step 5

On the unbuttered side of two slices of bread, spread 1 teaspoon of yellow mustard and 1 tablespoon of mayonnaise (optional but highly recommended).

Step 6

Layer a slice of fried bologna on the unbuttered side of each of the mustard/mayo-coated bread slices. Add a slice of American cheese on top of the bologna.

Step 7

Top with optional toppings like lettuce, tomato, or pickles if desired.

Step 8

Place the remaining slices of bread on top, buttered side facing out.

Step 9

Return the sandwiches to the skillet over medium heat. Cook for 2-3 minutes per side, pressing gently with a spatula to ensure the bread gets golden and crispy, and the cheese melts.

Step 10

Once both sides are golden brown, remove from the skillet, slice the sandwiches in half, and serve hot.
