Preheat your oven to 325°F (165°C).
Place six small ramekins in a deep baking dish or roasting pan.
In a medium saucepan, combine the heavy cream and whole milk over medium-low heat. Heat the mixture until it just begins to steam, then remove from heat.
Add the finely chopped dark chocolate to the hot cream mixture. Let it sit for 2 minutes, then whisk until smooth.
In a separate bowl, whisk together the egg yolks, sugar, vanilla extract, and sea salt until smooth.

Remove the ramekins from the water bath and let them cool to room temperature, then refrigerate for at least 2 hours or overnight to fully set.
