Ingredients

  • 6 medium Russet potatoes
  • 2 cups Cheddar cheese
  • 8 ounces Cream cheese
  • 1 cup Sour cream
  • 4 tablespoons Unsalted butter
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 cup Green onions (optional, for garnish)
  • 0.5 cup Bacon bits (optional, for topping)

Directions

Step 1

Peel and dice the russet potatoes into 1-inch cubes. Rinse the potato cubes in cold water to remove excess starch and pat them dry with a clean kitchen towel.

Step 2

Grease the inside of your slow cooker with a non-stick cooking spray or a small amount of butter to prevent sticking.

Step 3

Add the diced potatoes to the slow cooker.

Step 4

In a medium microwave-safe bowl, melt the cream cheese, sour cream, and butter together in 20-second intervals, stirring between each interval, until smooth and combined.

Step 5

Stir in the garlic powder, salt, and black pepper to the melted mixture. Mix well.

Step 6

Pour the cheese mixture over the potatoes in the slow cooker and toss to coat the potatoes evenly.

Step 7

Cover the slow cooker with its lid and cook on HIGH for 4 hours or LOW for 6 hours, stirring occasionally to ensure even cooking and coating.

Step 8

Once the potatoes are tender and fully cooked, sprinkle the shredded cheddar cheese on top. Replace the lid and cook for an additional 15 minutes, or until the cheese has melted.

Step 9

If desired, garnish with chopped green onions and bacon bits before serving.

Step 10

Serve warm directly from the slow cooker and enjoy!
