Ingredients

  • 16 oz Rotini pasta
  • 2 cups Cherry tomatoes (halved)
  • 1 large Cucumber (diced)
  • 1 medium Red bell pepper (diced)
  • 1 cup Black olives (sliced)
  • 1 cup Feta cheese (crumbled)
  • 1 small Red onion (thinly sliced)
  • 1 cup Italian dressing
  • 1 tbsp Fresh parsley (chopped)
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions until al dente. Drain and rinse under cold water to cool, then set aside to drain fully.

Step 2

While the pasta is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and red bell pepper, thinly slice the red onion, and slice the black olives.

In a large mixing bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, red bell pepper, black olives, red onion, and crumbled feta cheese.
