Ingredients

  • 4 medium Potatoes
  • 0.5 cup Walnuts
  • 2 cups Day-old bread
  • 4 tablespoons Olive oil
  • 2 cloves Garlic
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 1 tablespoon Lemon juice

Directions

Step 1

Peel the potatoes and cut them into bite-sized cubes. Place them in a pot of salted water and bring to a boil. Cook for 8-10 minutes, or until just tender but not falling apart. Drain and set aside.

Step 2

While the potatoes are cooking, cut the day-old bread into small cubes to make croutons.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the bread cubes and toast them for 5-7 minutes, stirring frequently, until golden and crispy. Remove the croutons from the skillet and set aside.

Step 4

In the same skillet, add the walnuts and toast them for 2-3 minutes on medium-low heat, stirring constantly to avoid burning. Remove the walnuts and set aside.

Step 5

Finely mince the garlic and parsley. Keep the parsley for garnish.

Step 6

Heat the remaining 2 tablespoons of olive oil in the same skillet. Add the minced garlic and sauté for 30 seconds until fragrant. Add the boiled potatoes to the skillet.

Season the potatoes with salt, black pepper, and paprika. Cook for about 5 minutes, stirring occasionally, until the potatoes develop a golden crust.

Turn off the heat and gently stir in the toasted walnuts, croutons, and lemon juice.

Transfer the mixture to a serving dish and sprinkle with freshly chopped parsley.
